Arugula Farro + Pomegranate Salad

It's finally feeling like Fall, and as much as those hearty soups and other comfort dishes just hit the spot - we still need our greens! I like bulking up a salad, like this Arugula Farro Pom-Nut Salad, with virtually any whole grain. Farro has been my go-to for the last few weeks. I paired this ancient grain with a lighter spicy green, arugula, tossed it with some pomegranate seeds from Trader Joe's, and chopped walnuts for a boost of healthy fats and protein. It's finished off with my Light Lemony Dressing for a sweet and zesty kick!

Arugula Farro + Pomegranate Salad

INGREDIENTS

  • 7 oz. arugula [1 Trader Joe's bag]

  • 2 cups farro, cooked [about 1 cup dry]

  • 1/2 cup pomegranate seeds [or more if you like!]

  • 1/2 cup walnuts, chopped

  • Light Lemony Dressing

INSTRUCTIONS

  1. Add arugula, farro, and pomegranate seeds to a large bowl. Toss gently until well combined.

  2. Drizzle with Light Lemony Dressing and toss again.

  3. Sprinkle walnuts on top and enjoy!
