Cacao Zucchini Bread
To be honest, zucchini is not my favorite veggie - bland, right? But, spruce it up with some chocolate [cacao powder], and I'm all in. Cacao powder is packed with antioxidants, iron, magnesium, fiber, and a little bit of caffeine. It's great to add in baked goods like this or to add a chocolate zing to smoothies. This Cacao Zucchini Bread tastes great on it's own, but I prefer it with a generous spread of nut butter for added flavor, healthy fat, and protein. This recipe is adapted from Nutrition Stripped's Chocolate Zucchini Bread.
Cacao Zucchini Bread
INGREDIENTS
1 zucchini, grated & patted dry
1 1/2 cup flour
1/2 cup almond flour
1/3 cup cacao powder
1/2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 cup agave/honey/maple syrup
2 chia eggs*
1/3 cup coconut oil
1/3 cup unsweetened applesauce
1 1/2 tsp. vanilla extract
1/2 cup chocolate chips
INSTRUCTIONS
Heat oven to 350 degrees and grease a loaf pan.
In a larger bowl, combine flours, cacao powder, baking soda, baking powder, salt, cinnamon, and chocolate chips and mix well.
In microwave safe bowl melt coconut oil then add agave, applesauce and vanilla, stir well. Add chia egg and mix until combined.
Gently mix wet ingredients into dry ingredients.
Pour mixture (it will be thick!) into loaf pan.
Bake for at least 50 minutes, until a knife inserted in the center comes out clean. Let cool for at least 30 before slicing.
*Chia egg: to make 1 chia egg, combine 1 tbsp. chia seeds with 3 tbsp. water. Let sit for 15 minutes before using. Note: this recipe calls for 2 chia eggs, so double up!
