Cilantro Lime Dressing

It's really difficult to find a decent [tasty] store bought salad dressing that isn't loaded with calories, fat, added sugar and other weird ingredients you can't pronounce. I often opt for making my own, and it usually takes just a few minutes, a couple ingredients, and a bowl/food processor. A little bit of effort and you can use the dressing/sauce all week. This creamy Cilantro Lime Dressing is great on salads, sandwiches and wraps, but it can also be used to dress up a grain salad [quinoa, farro, brown rice] or add some oomph to homemade tacos. The options are endless.  The cilantro lime flavor adds a little zing and summer flare to any meal using just a few ingredients.

Cilantro Lime Dressing

INGREDIENTS

  • 1 bunch of cilantro, washed & destemmed

  • 2 limes, juiced

  • 3/4 cup nonfat plain Greek yogurt

  • 1 garlic clove

  • 1/2 cup olive oil

  • 2 tsp. white wine vinegar

  • drizzle of honey/agave

  • S + P, to taste

INSTRUCTIONS

  1. Blend all ingredients in a small food processor or blender and drizzle on salads, use as a spread on wraps/sandwiches, or drizzle on tacos!
