Hot Sauce Baked Chicken
If you're looking for a quick and easy way to get your chicken cooked, and you like your meals with a little spice, this Hot Sauce Baked Chicken is your solution. Just 4 ingredients [including the chicken!], that you likely already have at home. You might be eyeballing the ENORMOUS bottle of hot sauce pictured, this is not a requirement. Just 1/4 cup of your favorite hot sauce will do, and as you can tell, I'm partial to Cholula.
If you're like me, and the weeknights get a little hectic, it's hard to find time to make a meal with a lot of ingredients that takes an hour to prepare. This Hot Sauce Baked Chicken comes to the rescue in our house almost once a week. I'll typically pair it with some roasted green beans and baked sweet potatoes [as I'm writing this, I'm realizing I really need to branch out!]. But, it's nice to have these go-to meals in your toolbox so you aren't twiddling your thumbs wondering, "what's for dinner?"
This chicken goes well on top of my Cashew Cream Pumpkin Mac + Cheese, Creamy Avocado Zoodles, or on top of a salad with this Cilantro Lime or Creamy Blue Cheese Dressing.

hot sauce baked chicken
INGREDIENTS
1-1 1/2 lbs. boneless skinless chicken breast
1/4 cup olive oil
2 tbsp. hot sauce [I love cholula!]
2 tbsp. mustard [spicy dijion gives it an extra kick]
Salt & Pepper [to taste]
INSTRUCTIONS
Preheat oven to 425 degrees. Lightly grease a small baking dish or line a rimmed sheet pan with parchment paper.
In a small bowl, combine olive oil, hot sauce, mustard, salt and pepper.
Place chicken in a gallon size ziplock bag with all of the marinade [or reserve a little bit to top the chicken later]. Let marinate for 15 minutes - 24 hours in the refrigerator.
Place chicken on prepared baking dish/sheet pan and bake for 25 minutes uncovered or until cooked all the way through.
