Smokey Enchilada Sauce
Not that you NEED to make your own enchilada sauce, BUT if you're in a pinch and craving some enchiladas, this Smokey Enchilada Sauce will come to your rescue and make all your enchilada dreams come true! Made from ingredients you likely already have in your pantry and without all the added "stuff" [coloring?!] in the canned variety, this sauce takes less than 10 minutes to whip up and even freezes well. INGREDIENTS
1 1/2 tbsp. olive oil
1 1/2 tbsp. flour
6 oz. tomato paste
1 cup low sodium vegetable broth
1 tbsp. chili powder
1 tsp. smoked paprika
1 tsp. cumin
1 tsp. garlic powder
INSTRUCTIONS
In a small sauce pan, heat olive oil on medium high heat.
Add flour and stir until a paste forms.
Add remaining ingredients and stir with a whisk until thick and smooth, about 5 minutes.
Use in your favorite enchilada recipe or my Butternut Squash Enchiladas.
