Salsa Verde Chicken Tacos

From my recipe box: this is a “throw together” Taco Tuesday meal with just 7 ingredients!

SALSA VERDE CHICKEN TACOS

Ingredients

  • 2 large chicken breasts

  • 1 jar @traderjoes salsa verde [or other brand you like!]

  • 1/2 yellow onion, sliced

  • 8 tortillas [I use Siete Foods Almond Flour for my paleo clients]

  • Shredded cabbage

  • Queso fresco, crumbled for topping

  • Cilantro, chopped for garnish

  • S & P

Directions

  1. Pre-heat oven to 425 & lightly grease a 8X8 baking dish.

  2. Place chicken in the baking dish & top with salt, pepper, half the jar of salsa & onions.

  3. Bake at 425 for ~20 minutes. Let chicken cool slightly & then shred with two forks [could also cook in the slow cooker or instant pot]

  4. In the tortillas, put a layer of cabbage [so the tortillas don’t get soggy!], chicken with the juices/salsa, queso fresco & cilantro.
