No-Bake Crunchy Peanut Butter Cheerio Bars

NO-BAKE CRUNCHY PEANUT BUTTER CHEERIO BARS
INGREDIENTS
2 C rolled/old fashioned oats
2 C Plain cheerios [I used Trader Joe’s Joe’s O’s]
1 C peanut butter [could sub almond butter]
1/2 C honey/maple syrup/agave
1 tsp cinnamon
1 tsp vanilla
DIRECTIONS
In a large bowl, mix all of the dry ingredients.
Melt sweetener of choice with peanut butter in the microwave for ~30 seconds until you’re able to stir it together. Add vanilla and mix well.
Combine wet ingredients with dry until well combined. Add more peanut butter/sweetener if it doesn’t seem to be sticking together.
Line a small baking dish [I used 8 X 5] with parchment and spread the mixture out evenly. Use some elbow grease to really press down the mixture into the dish [using more parchment paper on top if necessary].
Freeze for at least 30 minutes before cutting. I stored mine in the freezer!
