Fig & Prosciutto Pizza with Honey Chèvre

I figure, if we can add peaches to pizza (like this Rosemary Peach Pizza), why not figs too?! And so, this Fig & Prosciutto Pizza with Honey Chèvre was born! Fiber-rich like most fruits, figs are also full of potassium, magnesium, manganese, calcium, iron and vitamin K. There's a lot packed into these little guys! Not only do they have these nutritional benefits, they add an interesting crunch and texture to sweet and savory dishes.

Have you ever made your own pizza dough? It's been a while since I have -- we were on a streak of making pizzas every Sunday, and I got so used to picking up Trader Joe's whole wheat or garlic herb dough out of convenience (I saw they have a Sprouted Whole Grain Pizza Crust now too!), but, making my own dough is on my to-do list! You could even try this pizza combo on cauliflower pizza crust if you're into all things cauliflower these days. 

Some might say, "you're a dietitian and you're encouraging pizza?" Yes, yes I am. Because, we all have to live a little, right? There are so many boundaries and judgements around food and inviduals' choices. If we strip these away, even just a little bit, we might find that life is more fun, enjoyable, and less stressful (especially when it comes to food choices). Follow how you feel -- if you want salad, get a salad. If you're craving a burger or pizza, you might be better off going for it instead of trying to continually push that desire away (and P.S. sometimes that burger or pizza might be a little bit better for you than a salad anyways, shocking, I know!).

Fig & Prosciutto Pizza with Honey Chèvre

Ingredients

  • pizza dough, I used Trader Joe’s

  • 4-5 figs, sliced thin

  • 2 oz. goat cheese, I used Trader Joe’s honey chèvre

  • 3 oz. prosciutto

  • 1/2 - 3/4 cup parmesan, you could also do a mix of parm & mozzarella

  • salt & pepper, to taste

  • optional toppings: basil, balsamic drizzle

Directions

  1. Prepare dough according to package directions.

  2. Distribute remaining ingredients, aside from optional toppings, evenly over prepared dough.

  3. Bake according to dough directions and add optional toppings if desired.
