Vanilla Blueberry Banana Cookies
Just popping in a for a quick, sweet snack that’s definitely more summer inspired even though the calendar says it’s Fall [still 80 degrees in Nashville]! Also, I thought it was time to admit that I’m definitely that person who’s always searching for something sweet to snack on soon after [both] lunch and dinner. Although a piece of fruit might do the trick sometimes, in most cases I want something hearty that’s in the shape of a cookie or a muffin — anyone with me?! And these Vanilla Blueberry Banana Cookies did the trick. Plus, combining food groups, like I did with these healthier cookies, instead of munching on a single food can have a beneficial impact on satiety.
I received several products from Ancient Nutrition* to test out, and instead of just throwing this vanilla bone broth protein in a blender like I usually do for my smoothie bowls, I decided to give this healthier sweet snack a boost of protein — so there would be protein and carbohydrates [oats, bananas, blueberries] in one bite! Other examples of combining foods for a snack include dipping apple slices (fiber-rich carb) in nut butter (protein + healthy fat source), whole grain crackers with cheese, air-popped popcorn with a handful of almonds, carrots with hummus (protein + also fiber!) or berries with plain Greek yogurt. Do your go-to snacks combine at least 2 food groups?!

Vanilla Blueberry Banana Cookies
INGREDIENTS
2 1/2 Cup rolled oats, divided
1/2 tsp baking soda
1/4 tsp salt
2 Tbsp ground flaxseed
1 tsp cinnamon
1 scoop vanilla protein powder [I used Ancient Nutrition’s Vanilla Bone Broth Protein]*
2 ripe bananas, mashed
3 Tbsp melted coconut oil [I’ve also used avocado oil]
1/4 C maple syrup/honey/agave
1 tsp vanilla extract
3/4 Cup fresh or frozen blueberries [frozen will just make the cookies have a blue hue]
DIRECTIONS
preheat oven to 350 degrees F and line a baking sheet with parchment paper.
Process 1 1/4 C oats [half of the oats] until a flour like consistency forms. Add this oat flour to a bowl with remaining oats, baking soda, salt, flax, cinnamon & vanilla protein powder*, and mix.
combine all wet ingredients in a small bowl, except blueberries, and mix with dry ingredients until well combined.
Gently fold in blueberries and let the batter sit for a few minutes.
Use an ice cream scoop or large spoon to distribute dough evenly onto lined baking sheet. Press down with the back of a spoon to form into a cookie shape — you may need to use your hands.
Bake for 12 minutes or until the edges start to turn golden brown.
