Chocolate Beet Smoothie Bowl
Yes, beets…at breakfast. Are you still there? Good. I always like playing around with different veggies in smoothies. If I’m able to get a serving or two of veggies at breakfast it really makes me feel like I’ve gotten a head start on the day!
Beets, like most veggies, are rich in many nutrients and fiber that our bodies need, but they come with a bonus of antioxidant and anti-inflammatory properties. Nitrates in beets help with blood flow [thus blood pressure, overall heart health, brain function & maybe even endurance]. Plus, the amino acid betaine in beets helps with liver function.
Think you hate beets? This easy smoothie recipe might just be the best way to try including beets in your diet because the chocolate, banana and sweet potato do a great job masking the somewhat earthy taste of beets!
CHOCOLATE BEET SMOOTHIE BOWL
INGREDIENTS
3/4-1 C milk of choice
1/4-1/2 banana [more for sweeter smoothie]
1/4 frozen sweet potato [or omit and do all banana]
3/4 C frozen beets [I used Trader Joe’s, pictured]
1 scoop chocolate collagen or protein powder [I used Ancient Nutrition]
2 T cacao powder
1 T almond butter
Optional: 1 T flax and/or chia, dash turmeric, cinnamon
DIRECTIONS
combine all ingredients in a high speed blender until well combined and to your desired thickness. Start with less milk and add more if you would like a thinner, smoothie-like, consistency.
