Chocolate Raspberry Collagen Bites
from my recipe box: these collagen infused energy bites satisfy that sweet craving with a hint of tartness from the freeze dried raspberries. Store these Chocolate Raspberry Collagen Bites in the fridge or freezer for a snack packed with protein and healthy fats!
Chocolate Raspberry Collagen Bites
Ingredients:
1 cup pitted medjool dates (about 9, add 2-3 more for additional sweetness)
1 cup raw cashews
1/2 cup freeze dried raspberries + 1/3 cup for coating
1/4 cup cacao powder
2 scoops chocolate Ancient Nutrition Collagen or 1 scoop chocolate protein powder*
1/3 cup almond butter
2 tbsp coconut oil
pinch salt
optional: 1/4 cup mini chocolate chips, I like Enjoy Life Foods
Directions:
Place dates and cashews in a food processor and blend for a few seconds until smaller pieces form.
Add remaining ingredients aside from chocolate chips and process until well combined and it forms a ball (you want the dough to be slightly sticky. If it’s not, add water 1/2 tbsp at a time). Add chocolate chips and pulse a few times.
Roll into tablespoon sized balls.
Place the remaining 1/3 cup of freeze dried raspberries in the food processor and pulse a few times. Roll balls into the raspberry coating. Refrigerate or freeze.
