Key Lime Pie Energy Bites

ingredients:

  • 1 1/2 Cups almond flour

  • 1/2 cup quick oats, rolled oats or oat flour

  • 1/4 cup shredded coconut, plus more for coating

  • 1/3 cup almond or cashew butter

  • 1/4 cup maple syrup

  • 1/4 cup lime juice

  • 2 tbsp melted coconut oil

  • large pinch of salt

directions:

  1. add dry ingredients to a bowl and mix until well combined. add wet ingredients and stir until smooth. if mixture seems too wet, add more oats or almond flour.

  2. Refrigerate mixture for 20+ minutes.

  3. remove from refrigerator and form into small 1-1 1/2 inch balls, then gently roll into shredded coconut if desired. Store in fridge or freezer.
