Espresso Chocolate Chip Banana Bread

Espresso Chocolate Chip Banana Bread


ingredients:

wet:

  • 3 large ripe bananas, mashed  

  • 3 eggs 

  • 1/2 cup maple syrup 

  • 1 tbsp avocado oil 

  • 2 tsp vanilla 

dry:

  • 2 cups almond flour 

  • 1/2  cup + 1 tbsp cocoa powder

  • 1/4 cup espresso powder 

  • 1 tsp baking soda

  • 1/2 tsp salt 

  • 1/2 cup dark chocolate chips, plus more for topping

  • optional: fancy sea salt, like Maldon, to sprinkle on top


Directions:

  1. Preheat the oven to 350 degrees F and line a loaf pan with parchment paper.

  2. To a large bowl, add all wet ingredients and stir until well combined.

  3. Gently fold in all of the dry ingredients, except the chocolate chips.

  4. Fold in chocolate chips and pour batter into prepared loaf pan. Top with a few more chocolate chips.

  5. Bake at 350 degrees F for 30 minutes then turn the temperature down to 325 degrees F and continue baking for 25 more minutes or until a toothpick inserted comes out mostly clean.

  6. Optional: sprinkle with fancy sea salt when it comes out of the oven. Let rest for at least 1 hour before slicing.
