Vanilla Protein Cashew Butter Stuffed Dates
ingredients:
10-12 pitted medjool dates
1/4 cup cashew butter
1 tbsp vanilla protein
1 tsp vanilla
1 tsp maple syrup
optional: chocolate drizzle & sprinkle of fancy sea salt*
Directions:
Line a small baking sheet with parchment paper. Slice dates halfway through, lengthwise, and remove pits if needed.
In a small bowl, mix together cashew butter, vanilla protein powder, vanilla extract and maple syrup.
Fill each date with ~2 tsp cashew butter filling.
*Optional chocolate drizzle: in a microwave safe bowl, in 30 second increments, melt ~1/4 cup dark chocolate chips and 2 tsp coconut oil. Drizzle over each date, sprinkle with fancy sea salt, and freeze until chocolate hardens. Store in fridge or freezer.
