Pumpkin Pecan Oatmeal Chocolate Chip Cookies
INGREDIENTS:
3/4 cup almond flour
1/2 cup oats
1/2 cup almond butter
1/2 cup pumpkin puree
1/2 cup maple syrup
1 tbsp coconut flour
2 1/2 tsp pumpkin pie spice
1 tsp vanilla extract
—1 egg
1 tsp baking soda
1/2 cup chopped pecans, plus more for sprinkling on top
1/4 cup chocolate chips, plus more for sprinkling on top
fancy salt, like Maldon, for sprinkling on top
DIRECTIONS:
Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper.
In a medium size bowl, add the first 8 ingredients (almond flour through vanilla) and stir to combine. Cover and place in the fridge for at least 30 minutes.
After 30 minutes, add the remaining ingredients (except salt), and stir until well incorporated.
Using a cookie scoop, form dough into 9 large mounds (don’t smoosh down!) and place on the prepared baking sheets, leaving 2+inches between cookies.
Top with additional pecan pieces, chocolate chips, and a sprinkle of salt.
Bake for 18-20 minutes and enjoy!
