Fig, Farro & Walnut Kale Salad with Goat Cheese & Balsamic Tahini Dressing
Ingredients:
Salad:
5 cups (or large handfuls!) kale, chopped finely
6 - 8 fresh figs, chopped
2 cups cooked farro (I like Trader Joes bag of 10 minute farro)
2 oz crumbled goat cheese
2/3 cup chopped walnuts
black pepper
Balsamic Tahini Dressing:
2/3 cup tahini
1/4 cup balsamic vinegar
1/2 tsp garlic powder
1/2 tsp pepper
1/4-1/2 cup water, to thin*
Directions:
In a blender or mini food processor, add all ingredients for the balsamic tahini dressing and blend until smooth.
In a bowl, start with chopped kale and layer farro, figs, walnuts and goat cheese on top. Add freshly ground black pepper and your balsamic dressing when ready to serve.
*if using this dressing after it’s been refrigerated, you will likely need to gently stir in more water to get it to your desired, thinner, consistency.
