Herby Lemon Orzo Pasta Salad with Feta
Ingredients:
1 1/2 cup orzo, dry
1 bell pepper, diced
1 cup cherry/grape tomatoes, halved
1/2 large cucumber, seeded & quartered
4 oz feta, crumbled
2 tbsp mint, chopped
2 tbsp dill, chopped
1/4 cup parsley, chopped
3 tbsp lemon juice
1 tbsp olive oil
1 tsp garlic powder
1 tsp oregano
1 tsp salt
1/2 tsp black pepper
DIRECTIONS:
Cook orzo according to package directions, drain (saving pasta water!) and rinse.
While the orzo is cooking, chop your veggies and add to a bowl with crumbled feta, herbs, lemon, spices, salt and pepper.
Add orzo once cooled and 1/4-1/2 cup of reserved pasta water. Stir until the pasta comes together, adding more pasta water as needed.
Taste and adjust seasoning as needed. Serve with more crumbled feta on top.
