Sea Salt Oatmeal Cookie Dough Bars
INGREDIENTS:
1 cup cashew butter
1/2 cup maple syrup
1 cup oat flour
1 1/4 cup rolled oats
2 tsp vanilla
1/2 tsp almond extract (optional)
1/4 cup mini chocolate chips, plus more for topping
pinch of salt
for topping: Fancy sea salt, like Maldon
Directions:
Line an 8X8 baking dish with parchment paper.
To a large bowl, add all wet ingredients and stir until well combined.
Fold in dry ingredients.
Add mixture to prepared baking dish, pressing down as needed to get it evenly distributed (I use another piece of parchment to keep my hands clean!).
Top with extra chocolate chips, fancy salt and freeze for at least 30 minutes before cutting into 16 squares.
