Almond Butter Date Bites

Let's just say you've got 2 minutes until your 3p.m. meeting and you don't have the time to be chewing on a whole lot of anything, but you KNOW you'll be hangry [read: temperamental, rash, down right mean] if you step into that office on an empty stomach. And rightfully so, you likely haven't fueled up in 3-4 hours. So, what do you do? Grab one or two of these Almond Butter Date Bites and head into that meeting ready to be your best self! Don't let their size fool you, these Almond Butter Date Bites are dense and full of everything your body is craving in the post-lunch slump: fiber, healthy fats and protein.

ALmond butter date bites

INGREDIENTS

  • 10 dates, pitted & soaked

  • 1/2 cup cashews

  • 1/2 cup almonds

  • 1 tbsp. coconut oil, melted

  • 1 1/2 tsp. cinnamon

  • 1/2 cup raisins

  • 2 tbsp. almond butter

  • 1 tbsp. water, if needed

INSTRUCTIONS

  1. Soak dates for 10-15 minutes. Drain and pat dry.

  2. Place all ingredients in a food processor or high speed blender and blend until well combined. Add water if needed to bring the mixture together - it should be slightly sticky.

  3. Line a small baking dish/pan/container (smaller than 8X8 if possible or else the bites will be very thin) with parchment paper and pack the mixture down evenly. Use your muscles here.

  4. Cover and place in the freezer for at least 2 hours prior to cutting into 1" squares.
