Balance + Rosemary Peach Pizza

Balance is a major buzzword flowing through the health space, and it's not a bad thing! In fact, how many people can really say they live a truly healthy lifestyle 100% of the time? Not me. So for some, thinking in terms of balance - maybe 80-90% of the time you practice what you believe is a healthy lifestyle and 10-20% of the time you let yourself indulge in some of your favorite, less healthy, activities - ice cream, fried chicken, or several hours in front of the couch binge watching the latest Netflix series. This whole idea of balance will likely only "work" (i.e. not lead to weight gain, other health conditions, or just down right feeling bad about yourself) if it truly is balanced and you aren't spending a full 2 days barely moving your body and eating 2-3 times your caloric needs every. single. week.

One way to relieve yourself of that health roller coaster is finding a different way to think about your indulgences or ways you like to relax. What if sometimes you made your own, healthier, version of brownies or decide to go for a long walk instead of hitting the gym on the weekend days. It's still a deviation from your norm, just not a brownie the size of your head topped with ice cream or 6 hours of TV time.

This is my segue into pizza. It's probably one of the more indulgent, guilt-labeled foods, in our society, but oh-so-delicious. I'll admit, pizza is almost a weekly meal in our house. But, pizza doesn't have to be covered in guilt, especially when you make your own at home. Go heavy on the veggies (or fruit in this peach pizza case!) for added fiber, vitamins, and minerals. Go lighter on the cheese and you have a balanced meal: whole grain crust, fruit and protein from dairy or whatever other animal/plant based source you choose.

This delicious peach pizza was a result of a get together with my friend Molly, event planner, designer, and creator of The Cedar Lane. Her work is amazing, so much design inspiration! We didn't measure ingredients for this 'za, but you really can't go wrong following this formula:

Rosemary Peach Pizza

ingredients:

  • Pizza dough - we used Whole Foods dough

  • Olive oil - just a drizzle

  • Pesto - store-bought or my Basil Spinach Pesto

  • Burrata- you could also you mozzarella

  • Fresh peaches - sliced thin

  • Fresh rosemary - sprinkled throughout

  • Optionalsalt ( we used truffle! ) & pepper

DIRECTIONS:

  1. Preheat oven and prepare dough according package directions.

  2. Drizzle olive oil on the dough and spread evenly. Repeat with pesto.

  3. Evenly distribute burrata, peaches and rosemary.

  4. Bake for 15-20 minutes depending on how crispy you like your crust.
