Creamy Bleu Cheese Dressing + Grilled Romaine
Whether you're going classic with a cobb salad or looking to try something fancy (grilled romaine!?*), this creamy bleu cheese dressing gives you all the cheese impact with a lot less guilt. Greek yogurt is used as the base to cut down on fat and up the protein of this typically calorie and fat dense dressing.
*Grilled romaine goes really well with this dressing - slice heads of romaine in half, drizzle/spray with olive oil, and sprinkle with black pepper. Grill (or use a grill pan) on medium high heat for 2-3 minutes each side until you get those nice grill marks.
Creamy Bleu Cheese Dressing
INGREDIENTS
1/2 cup crumbled bleu cheese
1 cup 0% plain Greek yogurt
1 lemon, juiced
1 1/2 tbsp. white wine vinegar
garlic powder, generous dash
black pepper, to taste
INSTRUCTIONS
Place all ingredients in a mini food processor or blender and blend until smooth. Use as a salad dressing or dip for veggies.
