Light Lemony Dressing
A dressing as easy as it's name. This Light Lemony Dressing adds an element of freshness to all of the comfort foods that will soon be filling our plates. Nature always amazes me - just in time for cold and flu season, citrus fruits [loaded with vitamin C] are here to save the day. Check out these less common varieties [buddha's hand?! ugli fruit?!]. While we might think of these as light and summery fruits, they're actually most in season in the colder months. Although, lemons are in-season year round, other varieties of citrus fruits like grapefruit and tangerines are best in the winter months. As easily as you can whip this dressing up for a salad, it could also be used as a marinade [chicken or salmon?]. Go ahead, give it a squeeze...
Light lemony dressing
INGREDIENTS
1/3 cup + 1 tbsp. olive oil
2 tsp. dijon mustard
1 tbsp. agave/honey/maple syrup
2 1/2 lemons, juiced
1 clove garlic, minced
S + P, to taste
INSTRUCTIONS
Add all ingredients to a small food processor/blender and blend until well combined.
