Popcorn Granola Clusters

Granola. A 7 letter "bad word" in the nutrition world. Typically loaded with calories and covered in sugar, store bought granola may not always be the greatest breakfast choice. But, you love granola, so what do you do? Take 20 minutes and make your own. These Crunchy Granola Clusters are made with two whole grains - YEP, popcorn is a whole grain [just air pop your own using a brown paper bag or my favorite popcorn maker to reduce fat and salt]! This is a snack game changer or crunchy yogurt topper that almost...almost...tastes like kettle corn.

Popcorn Granola Clusters

INGREDIENTS

  • 1/4 cup popcorn kernels [5 cups popped]

  • 1 1/2 cup rolled oats

  • 2 tsp cinnamon

  • sprinkle of salt

  • 2 tbsp coconut oil, melted

  • 1/2 cup agave/honey/maple syrup

INSTRUCTIONS

  1. Preheat oven to 375 degrees.

  2. Add popcorn, oats, cinnamon, and salt to a large bowl and mix. Slightly crushing larger pieces of popcorn.

  3. In a small bowl, combine melted coconut oil and sweetener of choice.

  4. Add wet ingredients to dry ingredients and mix well.

  5. Line a baking sheet with parchment paper and spread mixture evenly.

  6. Bake for 13-15 minutes, until golden brown and crispy.

  7. Let cool and enjoy on yogurt, smoothie bowls, or on it's own!
