Miso Turmeric Sweet Potato Soup

Miso Turmeric Sweet Potato Soup

Ingredients:

  • 2 tbsp olive oil

  • 1/2 white onion, diced

  • 3 cloves garlic, minced

  • 1” piece ginger, minced (or ~1 tbsp already grated)

  • 2 tsp turmeric

  • 3 sweet potatoes, cubed

  • 4 cups vegetable or chicken broth

  • 3 1/2 tbsp white miso

  • 1/2 cup unsweetened coconut milk

  • salt & pepper to taste


Directions:

  1. In a large pot, sauté onion, garlic & ginger over medium heat until onion is slightly translucent. Add turmeric and stir. Add sweet potatoes, stir again.

  2. Add broth and bring to a boil then reduce to a simmer and put the top on for 20 minutes or until the sweet potatoes can be easily poked with a fork.

  3. Remove pot from the heat and add the miso, coconut milk, salt and pepper. Transfer to a blender (carefully!) or use an immersion blender and blend until very smooth. Enjoy!
