Miso Turmeric Sweet Potato Soup
FROM MY RECIPE BOX: this thick & Creamy Miso Turmeric Sweet Potato soup is comfort (& a whole lot of vitamin A & C, Potassium & fiber!) in a bowl. 1 pot plus a blender makes this soup super easy to whip up!
Miso Turmeric Sweet Potato Soup
Ingredients:
2 tbsp olive oil
1/2 white onion, diced
3 cloves garlic, minced
1” piece ginger, minced (or ~1 tbsp already grated)
2 tsp turmeric
3 sweet potatoes, cubed
4 cups vegetable or chicken broth
3 1/2 tbsp white miso
1/2 cup unsweetened coconut milk
salt & pepper to taste
Directions:
In a large pot, sauté onion, garlic & ginger over medium heat until onion is slightly translucent. Add turmeric and stir. Add sweet potatoes, stir again.
Add broth and bring to a boil then reduce to a simmer and put the top on for 20 minutes or until the sweet potatoes can be easily poked with a fork.
Remove pot from the heat and add the miso, coconut milk, salt and pepper. Transfer to a blender (carefully!) or use an immersion blender and blend until very smooth. Enjoy!
