30 Minute Chicken & Veggie Soup

30 Minute Chicken & Veggie Soup

Ingredients:

  • 1 rotisserie chicken, shredded

  • 1 tbsp olive oil 

  • 1/2 yellow onion, diced

  • 2 carrots, diced 

  • 2 stalks celery, diced 

  • 8 oz mushrooms, I used shiitake, diced 

  • 1 tbsp minced garlic 

  • 8 cups chicken broth 

  • 2 tsp dried basil 

  • 1 tsp dried oregano

  • 1 tsp dried thyme 

  • 1 tsp salt, or to taste

  • pepper, to taste

  • 2 bay leaves 

  • 1-3 cups spinach, chopped (the more the better!)

  • parsley, optional, chopped

Directions:

  1. In a dutch oven or large pot, heat olive oil over medium heat. Add onion, carrots, celery and mushrooms. Sauteing until veggies have softened slightly and onion is translucent. About 5-7 minutes.

  2. Add garlic and saute another minute. Add broth, oregano, thyme, basil, salt, pepper and bay leaves. Bring to a boil. Reduce to a simmer and stir occasionally for 15-20 minutes.

  3. Remove bay leaves, add spinach, parsley and shredded chicken. Adjust seasoning as desired and enjoy!
