30 Minute Chicken & Veggie Soup
Ingredients:
1 rotisserie chicken, shredded
1 tbsp olive oil
1/2 yellow onion, diced
2 carrots, diced
2 stalks celery, diced
8 oz mushrooms, I used shiitake, diced
1 tbsp minced garlic
8 cups chicken broth
2 tsp dried basil
1 tsp dried oregano
1 tsp dried thyme
1 tsp salt, or to taste
pepper, to taste
2 bay leaves
1-3 cups spinach, chopped (the more the better!)
parsley, optional, chopped
Directions:
In a dutch oven or large pot, heat olive oil over medium heat. Add onion, carrots, celery and mushrooms. Sauteing until veggies have softened slightly and onion is translucent. About 5-7 minutes.
Add garlic and saute another minute. Add broth, oregano, thyme, basil, salt, pepper and bay leaves. Bring to a boil. Reduce to a simmer and stir occasionally for 15-20 minutes.
Remove bay leaves, add spinach, parsley and shredded chicken. Adjust seasoning as desired and enjoy!
