BBQ Turkey Stuffed Sweet Potatoes
BBQ TURKEY STUFFED SWEET POTATOES
Ingredients:
4-5 small/medium sweet potatoes
1 tbsp olive oil
1/2 red onion, diced
1 red bell pepper, diced
1 lbs ground turkey
1/2-3/4 cup bbq sauce, I like The New Primal*
salt, to taste
optional: green onions & more BBQ sauce for topping
DIRECTIONS:
Pre hEAT OVEN TO 450 DEGREES F. LINE A BAKING SHEET WITH FOIL AND LIGHTLY GREASE. POKE SWEET POTATOES ALL OVER WITH A FORK AND ROAST FOR 35-50 MINUTES, DEPENDING ON SIZE, UNTIL THEY CAN BE EASILY PIERCED WITH A FORK.
WHILE SWEET POTATOES ARE ROASTING, ADD OIL TO A SAUTÉ PAN ON MEDIUM HEAT. ONcE HOT, ADD onion and bell pepper, SAUTÉING until onion is translucent and pepper has softened. Add TURKEY AND BROWN UNTIL NO PINK REMAINS. REMOVE FROM HEAT AND STIR IN BBQ SAUCE UNTIL TURKEY IS WELL COATED.
REMOVE SWEET POTATOES FROM THE OVEN, CUT THEM DOWN THE CENTER (NOT ALL THE WAY THROUGH!), AND LET COOL UNTIL YOU ARE ABLE TO HANDLE THEM EASILY.
GENTLY OPEN UP THE SWEET POTATOES FROM THE CUT THAT YOU MADE AND STUFF SWEET POTATOES WITH THE TURKEY MIXTURE (THERE WILL LIKELY BE EXTRA FILLING THAT YOU CAN LET OVERFLOW ON THE PLATE!). TOP WITH GREEN ONIONs and ADDITIONAL BBQ sauce if desired.
