Blueberry Almond Butter Muffins
ingredients:
1/2 cup almond butter
1/3 cup maple syrup
1/4 cup melted coconut oil
2 eggs
2 tsp vanilla
3/4 cup oat flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup frozen blueberries (tossed in a little bit of oat flour to avoid sinking!), plus more for sprinkling on top
DIRECTIONS:
Preheat oven to 325 degrees F and lightly grease a 12 cup muffin pan.
In a large bowl, stir together the wet ingredients until well combined.
Add oat four, baking soda and salt and stir again until well combined and no clumps remain.
Fold in frozen blueberries and spread evenly among prepared muffin tin.
Sprinkle each with an additional blueberry or two.
Bake for 28-30 minutes or until a toothpick inserted in the center comes out clean.
