Blender Tahini Coconut Chocolate Chip Muffins
Ingredients:
wet:
1 cup tahini
1/2 cup maple syrup
3 eggs
2 tbsp avocado oil or melted coconut oil
2 tsp vanilla
dry:
3 tbsp coconut flour
1/2 tsp baking soda
1/4 tsp salt
1/3 cup finely shredded coconut, plus more for topping
1/3 cup chocolate chips, plus more for topping
Directions:
Preheat oven to 350 degrees F and line a muffin tin with liners (or grease very well!).
To a blender, add all wet ingredients and blend until smooth.
Add dry ingredients, except for the chocolate chips and coconut, and blend again until just combined. Stir in chocolate chips and coconut.
Evenly distribute batter into prepared muffin tin and bake for 20-22 minutes, or until a toothpick inserted into the center of the muffins comes out mostly clean. Best served warm (I reheat in the microwave for ~10 seconds)!
