Pumpkin Macadamia Crunch Muffins
Ingredients:
1 cup almond butter
1/2 cup pumpkin
1/2 cup maple syrup
2 eggs
1 tbsp pumpkin pie spice
2 tbsp coconut flour
1 tsp vanilla
1/2 tsp baking soda
1/4 tsp salt
1/2 cup macadamia nuts, plus more for topping
Directions:
Preheat oven to 350 degrees F and lightly grease a 12 cup muffin pan.
In a high speed blender, add all ingredients (except macadamia nuts) and blend, stopping to scrape down the sides as needed, until well combined.
Fold in macadamia nuts and evenly distribute the batter into the prepared muffin pan.
Top each with a sprinkle of macadamia nuts.
Bake for 22 minutes or until a toothpick inserted in the center comes out clean.
