Buffalo Chicken Pasta Salad
Buffalo Chicken Pasta Salad
ingredients:
- 8 oz. pasta, I like banza chickpea pasta, save the pasta water! 
- 1 rotisserie chicken, shredded 
- 1 tbsp olive oil 
- 1 package of trader joes mirepoix (or 2 carrots, 2 stalks celery and 1/2 onion, diced) 
- 1 red bell pepper, diced 
- 1/3 cup buffalo sauce 
- 1/4 cup ranch, or more for a creamier, less spicy version 
- 3 tbsp greek yogurt, or more for a creamier, less spicy version 
- 2 tsp oregano 
- 1/4 tsp garlic powder 
- 1/4 tsp salt 
- 1/4 tsp pepper 
- optional: 1/2 cup (or more) shredded cheddar cheese to top 
Directions:
- Cook pasta according to package directions. Drain, saving pasta water. 
- In a saute pan over medium heat. Add olive oil, and once hot, add mirepoix and diced bell pepper. Saute for 7-10 minutes or until veggies have softened. 
- Add shredded chicken, buffalo sauce, ranch, yogurt, oregano, garlic powder, salt and pepper to the veggie mixture and stir to combine. 
- Add pasta, 1/4 cup pasta water (or more as needed) and toss. Adjust seasonings to taste and top with shredded cheddar cheese.
