Buffalo Chicken Pasta Salad
ingredients:
8 oz. pasta, I like banza chickpea pasta, save the pasta water!
1 rotisserie chicken, shredded
1 tbsp olive oil
1 package of trader joes mirepoix (or 2 carrots, 2 stalks celery and 1/2 onion, diced)
1 red bell pepper, diced
1/3 cup buffalo sauce
1/4 cup ranch, or more for a creamier, less spicy version
3 tbsp greek yogurt, or more for a creamier, less spicy version
2 tsp oregano
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
optional: 1/2 cup (or more) shredded cheddar cheese to top
Directions:
Cook pasta according to package directions. Drain, saving pasta water.
In a saute pan over medium heat. Add olive oil, and once hot, add mirepoix and diced bell pepper. Saute for 7-10 minutes or until veggies have softened.
Add shredded chicken, buffalo sauce, ranch, yogurt, oregano, garlic powder, salt and pepper to the veggie mixture and stir to combine.
Add pasta, 1/4 cup pasta water (or more as needed) and toss. Adjust seasonings to taste and top with shredded cheddar cheese.
