One-Pot Buffalo Chicken Orzo
One-Pot Buffalo Chicken Orzo
Ingredients:
3 cups cooked shredded chicken
1 tbsp olive oil
1 14.5 oz container mirepoix, or roughly 1/2 onion, 2 stalks celery and 2 carrots, finely diced
2 cups orzo, dry
4 cups chicken broth
1 cup shredded cheddar cheese
3/4-1 cup mild buffalo sauce, depending on desired spiciness
3 tbsp plain greek yogurt, or more to tame spiciness
1 tsp garlic powder
1 tsp oregano
1/2 tsp salt
1/2 tsp black pepper
crumbled blue cheese, optional to garnish
green onion, optional to garnish
Directions:
Add olive oil to a large sauté pan or pot and sauté mirepoix over medium heat until vegetables are tender, about 5-7 minutes. Add garlic powder, oregano, salt and pepper and stir until fragrant.
Add orzo and stir 1-2 minutes until toasted. Add chicken broth and stir occasionally until orzo is al dente and most of the liquid has absorbed, about 8 minutes.
Stir in shredded chicken, cheddar cheese, buffalo sauce and greek yogurt. Taste and adjust seasoning/spice level as desired. Serve with crumbled blue cheese and green onions on top.
