Lemony Butternut Squash Sausage Pasta with Kale & Parmesan

Ingredients:

  • 8 oz chickpea noodles, I like Banza

  • 1 tbsp olive oil

  • 1 lbs ground mild Italian sausage (chicken or pork)

  • 2 1/2 cups finely chopped kale

  • 1 medium butternut squash, cubed & roasted*

  • 1/2 cup grated parmesan

  • 1 1/2 lemons, juiced 

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

Directions:

  1. Cook pasta according to package directions and save pasta water.

  2. In a sauté pan over medium heat, add olive oil and sausage and brown, breaking up into small pieces as it cooks, until no pink remains. Stir in kale until wilted. 

  3. To a large bowl add your sausage and kale mixture along with cooked pasta, roasted squash, lemon juice and seasonings.

  4. Stir to combine while gradually adding pasta water and Parmesan until the mixture starts to come together without getting too watery (I’ve found 1/2 cup pasta water works well). Adjust seasonings and top with more cheese and black pepper. 

* I roast butternut squash at 425 for 30-40 mins with an all purpose seasoning, salt, pepper, and olive oil
