Crustless Sausage, Spinach, Sweet Potato & Goat Cheese Quiche
INGREDIENTS:
1 tbsp olive oil
1 lbs ground mild Italian chicken/pork sausage
3 oz spinach
1 medium sweet potato, cubed & roasted*
2 1/2 oz goat cheese, crumbled
10 eggs
1/4 cup milk of choice
salt & pepper, to taste
DIRECTIONS:
Preheat oven to 350 degrees F and lightly grease a pie plate.
In a saute pan over medium heat, add olive oil and sausage. Brown, breaking up into smaller pieces until no pink remains.
Stir in spinach until wilted.
In a bowl, whisk together eggs, milk, salt and pepper.
Add roasted sweet potatoes and sausage/spinach mixture to the prepared pie plate.
Top with half of the goat cheese and whisked eggs.
Stir until evenly distributed. Top with remaining goat cheese.
Bake for 35-40 minutes or until eggs are set.
*I roast my cubed sweet potatoes with olive oil, salt, pepper and a no-salt seasoning like Trader Joe’s 21 Seasoning Salute at 425 degrees F for 30ish minutes.
