Apple, Bacon & Brie Crustless Quiche

Apple, Bacon & Brie Crustless Quiche

Ingredients:

  • 8 oz bacon

  • 3/4 medium apple, sliced thin (I used a mandoline)

  • ~5 oz brie, cut into bite sized pieces (more or less depending on desired cheesiness) 

  • 8 eggs

  • 2/3 cup almond milk 

  • salt & pepper, to taste


Directions:

  1. Preheat oven to 400 degrees F and line a large baking sheet with foil. 

  2. Place bacon on prepared baking sheet and bake for 18 minutes or until crispy. 

  3. Remove from the oven and carefully place bacon on a plate lined with a paper towel. Gently pat off excess grease. Chop into small pieces. 

  4. Reduce oven to 350 degrees F and grease a pie plate. 

  5. Whisk the eggs together with the almond milk, salt and pepper.

  6. Add most of the sliced apple, brie and bacon to the prepared pie plate. Pour egg mixture over top. Gently place any remaining apple slices, brie or bacon on top. Bake for 40-45 minutes or until eggs are set.
