Peanut Butter Banana Overnight Oats

Ingredients:

  • 1 ripe banana, mashed

  • 2 cups oats

  • 2 cups unsweetened vanilla almond milk, more or less depending on desired consistency

  • 1/4 cup maple syrup

  • 1/4 cup drippy peanut butter

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • pinch of salt

  • optional toppings: chopped peanuts, more peanut butter, cinnamon, sliced banana

DIRECTIONS:

  1. In a large bowl, add all ingredients and stir well to combine.

  2. Let set in refrigerator for 4+ hours and serve with desired toppings. I typically get 3-4 servings out of this!
