Parmesan Sausage Pasta with Spinach & Mushrooms
Ingredients:
1/2 tbsp olive oil
1 lbs ground mild Italian sausage (pork or chicken)
3 oz spinach
1 red onion, sliced thin
8 oz mushrooms, sliced thin
1 lb pasta of choice, save the pasta water!
1/2 cup grated parmesan, plus more for topping
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
Directions:
In a large saute pan over medium heat, add olive oil and sausage.
Brown, breaking up into smaller pieces, until no pink remains. Stir in spinach until wilted and transfer to a large bowl.
In the same pan, add sliced red onion and mushrooms. Cook for 10 -12 minutes, stirring frequently, until veggies are tender and lightly browned. Transfer to the bowl.
Cook pasta according to package directions, saving the pasta water.
Add your cooked pasta to the bowl along with 1/4-1/2 cup reserved pasta water (start with 1/4 and work up as needed), parmesan, garlic powder, salt and pepper. Toss to combine. Taste and adjust seasoning as needed. Top with additional parmesan before serving.
