Pumpkin Peanut Butter Chocolate Covered Stuffed Dates
INGREDIENTS:
18 MEDJOOL DATES
1/4 CUP Peanut BUTTER
1/2 Cup pumpkin puree
2 tsp maple syrup
3/4 tsp pumpkin pie spice
pinch of salt
3/4 CUP DARK CHOCOLATE CHIPS, I USE ENJOY LIFE
1 TBSP COCONUT OIL
FANCY SALT, LIKE MALDON, OPTIONAL
DIRECTIONS:
LINE A SMALL BAKING SHEET WITH PARCHMENT PAPER. SLICE DATES HALFWAY THROUGH LENGTH WISE, REMOVE THE PITS IF NEEDED AND PLACE THE DATES ON THE PREPARED BAKING SHEET.
In a small bowl, whisk together peanut butter, pumpkin, maple syrup, pumpkin pie spice and salt. FILL EACH DATE WITH 1-2 TSP of the mixture and PLACE IN FREEZER FOR 5+ MINUTES.
WHILE THE DATES ARE IN THE FREEZER, PLACE CHOCOLATE CHIPS AND COCONUT OIl in a MICROWAVE SAFE BOWL. MICROWAVE at 30 SECOND INCREMENTS, STIRRING IN BETWEEN, UNTIL CHOCOLATE CHIPS ARE COMPLETELY MELTED (ABOUT 3 TIMES!).
PLACE Fancy Salt IN a SMALL BOWL. USING ONE HAND, COMPLETELY COAT DATES IN CHOCOLATE, SHAKING OFF any EXCESS. USING YOUR OTHER CLEAN HAND, IMMEDIATELY SPRINKLE THE DATE WITH SALT. REPEAT UNTIL ALL DATES ARE COATED. FREEZE FOR 10+ MINUTES AND ENJOY!
