Egg Roll in a Bowl
Ingredients:
1 tbsp sesame oil
1/2 cup diced onion
1 bell pepper, diced
1 tbsp minced garlic
1 lbs ground turkey
10 oz kale/cabbage/shredded brussel sprout mix, I like the Cruciferous Crunch mix from Trader Joes
1 (heaping) tbsp ground ginger
4-5 tbsp coconut aminos*
1/2 tsp salt
pepper, to taste
optional: sriracha, cilantro, green onions and/or sesame seeds to garnish. Rice or quinoa to serve over.
DIRECTIONS:
add sesame oil to a large saute pan over medium heat. Once hot, add onion and pepper. Saute until onion is translucent and pepper has softened slightly. Stir in garlic and saute another minute.
Add ground turkey, breaking up as it brown. Continue stirring/breaking up until completely browned and no pink remains.
Add kale/cabbage/brussel sprout mix and continue to stir until wilted.
Add ginger, coconut aminos, salt and pepper. Stir, taste, and adjust as needed.
Serve over rice/quinoa, top with sriracha, cilantro, green onions and/or sesame seeds if desired.
*sub soy sauce for coconut aminos, but start with less and add more until you reach desired taste.
