Vegetarian Black Bean & Pico de Gallo Enchiladas
Vegetarian Black Bean & Pico de Gallo Enchiladas
ingredients:
1 can black beans, drained & rinsed
16 oz pico de gallo
1/2-1 cup pepper jack cheese
cilantro, optional
pinch of salt
8 Siete Food tortillas, or other tortilla of choice
Directions:
Preheat oven to 400 degrees F and grease a large baking dish.
In a bowl, combine black beans, pico de gallo, cilantro, salt and 1/2 cup cheese.
Fill a tortilla with ~1/4 cup of the pico de gallo mixture, roll up, and place seam side down in prepared baking dish. Repeat with remaining tortillas. If there’s leftover filling, pour it over the enchiladas and top with desired amount of cheese.
Bake for 15-20 minutes or until cheese and tortillas start to turn golden.
