Baked Turkey Taco Meatballs
ingredients:
1 lbs ground turkey (or chicken)
2 tbsp mild taco seasoning
1 egg
1/2 cup shredded Mexican cheese
1/3 cup panko breadcrumbs
2 tbsp chopped cilantro, optional
Directions:
Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
In a bowl, add taco seasoning, egg, cheese, breadcrumbs and cilantro until well combined. Add ground turkey and use your hands to gently incorporate, but don’t over mix!
Form into ~2 tbsp sized balls and place on prepared baking sheet. I get 11-12 meatballs.
Bake for 15-17 minutes or until cooked through. Serve with Cilantro Lime Rice and veggie!
