Tortellini with Chicken Sausage, Butternut Squash, Spinach & Parmesan
Ingredients:
1/2 tbsp olive oil or olive oil spray
1 butternut squash, peeled, deseeded & cubed
14 oz. chicken sausage, I like this Whole Foods Brand
5 oz. spinach
9 oz. tortellini, I like Kite Hill’s tortellini
1/2 cup grated parmesan, or more depending no desired cheesiness!
salt & pepper, to taste
Directions:
Preheat oven to 425 degrees F and line a baking sheet with parchment paper.
Add cubed butternut squash to prepared baking sheet and toss or spray with olive oil. Sprinkle with salt and pepper and bake for 25-30 minutes or until easily pieced with a fork.
While the squash is cooking, in a saute pan over medium heat, cook the chicken sausage, breaking up into small pieces until fully cooked through. Stir in spinach until wilted.
Cook tortellini according to package directions.
In a large bowl, add squash, chicken sausage/spinach mixture, tortellini and parmesan. Gently tossing until well combined. Season with salt and pepper.
