Tortellini with Chicken Sausage, Butternut Squash, Spinach & Parmesan

Tortellini with Chicken Sausage, Butternut Squash, Spinach & Parmesan

Ingredients:

  • 1/2 tbsp olive oil or olive oil spray

  • 1 butternut squash, peeled, deseeded & cubed

  • 14 oz. chicken sausage, I like this Whole Foods Brand

  • 5 oz. spinach

  • 9 oz. tortellini, I like Kite Hill’s tortellini

  • 1/2 cup grated parmesan, or more depending no desired cheesiness!

  • salt & pepper, to taste

Directions:

  1. Preheat oven to 425 degrees F and line a baking sheet with parchment paper.

  2. Add cubed butternut squash to prepared baking sheet and toss or spray with olive oil. Sprinkle with salt and pepper and bake for 25-30 minutes or until easily pieced with a fork.

  3. While the squash is cooking, in a saute pan over medium heat, cook the chicken sausage, breaking up into small pieces until fully cooked through. Stir in spinach until wilted.

  4. Cook tortellini according to package directions.

  5. In a large bowl, add squash, chicken sausage/spinach mixture, tortellini and parmesan. Gently tossing until well combined. Season with salt and pepper.
