Banana Oatmeal Macadamia Crunch Muffins

ingredients:

  • 2 ripe bananas, mashed

  • 1/2 cup almond butter

  • 3 tbsp maple syrup 

  • 1 egg

  • 3/4 cup oats 

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup macadamia nuts, finely chopped plus more for topping 

Directions:

  1. Preheat oven to 350 degrees F and lightly grease a 12 cup muffin pan.

  2. In a medium size bowl, add mashed bananas, almond butter, maple syrup and eggs. Stir until well combined.

  3. Stir in oats, baking soda, salt. Fold in macadamia nuts.

  4. Evenly distribute batter in prepared muffin pan and top each with an additional sprinkle of chopped macadamia nuts.

  5. Bake for 22-25 minutes or until a toothpick inserted comes out mostly clean. Store in the fridge.
