Crustless Spinach, Mushroom & Chicken Sausage Quiche with Feta
Ingredients:
14 oz ground chicken breakfast sausage
10 oz sliced white mushrooms
3 oz spinach
1/3 cup feta, or more & more to top
6 eggs
1/3 cup milk
3/4 tsp dried dill, optional
1/4 tsp salt
optional: crushed red pepper flakes & black pepper to taste
Directions:
Preheat oven to 350 degrees F and grease a pie plate.
In a large saute pan, brown sausage until no pink remains. Add to prepared pie plate.
In the same pan, saute mushrooms for 7-10 minutes (they should be dark brown and softer). Stir in spinach and cook until wilted. Add Veggies to the prepared pie plate.
Whisk together eggs, milk, dill, salt, pepper, and crushed red pepper flakes in a medium bowl. Stir in feta and pour over sausage/veggie mixture.
Sprinkle additional feta on top if desired and Bake for 40 minutes or until eggs are set.
