Mint Chocolate Chia Pudding
ingredients:
1 15 oz can full fat coconut milk
1 1/2 cups almond milk
2/3 cup chia seeds
1/3 cup cocoa powder (+ 1-2 tbsp if you want it more chocolatey!)
3 tbsp maple syrup (or more depending on desired sweetness)
1/2 tsp peppermint extract
optional: mini chocolate chips & mint to garnish
Directions:
Add coconut milk, almond milk and chia seeds to a blender and blend until well combined.
Add cocoa powder, maple syrup, and peppermint extract. Blend again for 10-20 seconds. Let sit for a few minutes before blending again for 20-40 seconds or until the mixture thickens. Add more cocoa powder, maple syrup or peppermint extract as desired.
Divide among containers and top with chocolate chips and mint.
