Mocha Coconut Chia Pudding
from my recipe box: pudding with A buzz! This Mocha Coconut Chia Pudding takes less than 5 minutes to blend up for several days worth of breakfast/snacks/desserts that are satisfying, chocolaty, and caffeine-filled!
Mocha Coconut Chia Pudding
Ingredients:
1 14 oz. can coconut (full fat)
1/2 C Kimera Koffee, cooled*
2 tbsp maple syrup
2 tbsp cacao powder
1/4 c collagen
1/3 c chia seeds
Directions:
blend everything except for the chia seeds in a high speed blender.
to a medium size bowl, add chia seeds then gradually whisk in coconut coffee mixture.
Let sit for minutes. Whisk again and then place in the refrigerator for an hour. Whisk again and let sit for another 3+ hours until the mixture becomes thick. Serve as is or with berries, almond butter, shredded coconut and/or chocolate chips.
