Buffalo Turkey Enchiladas with Spinach & Sweet Potatoes
BUFFALO TURKEY ENCHILADAS WITH SPINACH & SWEET POTATOES
INGREDIENTS:
1/2 tbsp olive oil
1 lbs ground turkey
3 handfuls spinach, chopped
1 medium sweet potato, cooked & mashed
2/3 cup buffalo sauce, I like The New Primal*, plus more to drizzle on top
1/3 cashew cheese, I like siete nacho cheese (or replace with shredded mexican cheese!)
1 tsp cumin, optional
salt & pepper, to taste
8 tortillas, I like siete almond flour
DIRECTIONS:
Preheat oven to 400 degrees and lightly grease a 9X13 baking dish.
In a saute pan over medium heat, add olive oil and brown ground turkey until no pink remains.
Add the turkey to a large bowl and toss with spinach, sweet potato, buffalo sauce, cashew cheese, cumin, salt and pepper.
Divide filling evenly among tortillas, roll up, and place seam-side down in prepared baking dish. If there’s leftover filling, you can spread it on top of the enchiladas.
Drizzle with buffalo sauce and/or more cashew cheese.
Bake for 22-25 minutes or until tortillas turn slightly golden.
