Chipotle Pumpkin Turkey Enchiladas

Chipotle Pumpkin Turkey Enchiladas

Ingredients:

for the sauce:

  • 1 - 15 oz can pumpkin puree

  • 3/4 cup chicken broth

  • 2 chipotle peppers (from a can of chipotle peppers in adobo), add more for additional heat!

  • 3/4 tsp salt

  • 1/2 tsp cumin

  • 1/4 tsp black pepper

for the filling:

  • 1 tbsp olive oil

  • 1 lbs ground turkey

  • 4 cups spinach, roughly chopped

  • 1 cup shredded cheddar cheese, divided

  • 1/4 cup chopped cilantro 

  • 8 tortillas, I like Siete Foods

Directions:

  1. Preheat oven to 400 degrees F and lightly grease a 9X13 baking dish.

  2. Add sauce ingredients to a blender and blend until smooth.

  3. In a large saute pan over medium heat, add olive oil and turkey and continually break up into smaller pieces until no pink remains.

  4. Stir in the spinach, 1/2 cup cheese, cilantro, and ~1 1/2 cups of the sauce.

  5. Add ~ 1/4-1/3 cup of filling to each tortilla. Roll up and place seamside down on prepared baking dish. Top with any remaining filling, the rest of the sauce and cheese.

  6. Bake for 20 minutes and enjoy!
