English Muffin Egg Sammies
English Muffin Egg Sammies
Ingredients:
1 tbsp olive oil
2.5 oz spinach (typically half a bag)
10 eggs, whisked
1/3 - 1/2 cup shredded cheddar cheese
6 english muffins*
salt & pepper
optional: turkey sausage patties, stone ground mustard to spread on english muffins
Directions:
Heat a large sauté pan over medium heat and add olive oil. Once hot, add spinach and stir until wilted.
Add whisked eggs and turn heat down. Stir pretty continuously until eggs are almost cooked. Fold in cheese and stir until completely melted. Season with salt and pepper.
If using mustard, spread a small amount on the bottom of each english muffin.
If using turkey sausage, cook according to package directions and place on the bottom of each english muffin.
Divide egg mixture evenly among the 6 english muffins and gently press the other half of the english muffin on top of the egg. Enjoy!
*if eating immediately, toast your english muffins!
