Chocolate Peppermint Marshmallow Bars

Ingredients:

crust (from Erin Lives Whole’s S’mores Bars)

  • 3 1/2 cups almond flour

  • 1/2 cup melted coconut oil

  • 1/2 cup maple syrup

  • 2 tsp vanilla

  • 1/2 tsp salt

Directions:

  1. Preheat oven to 375 degrees F and line an 8 X 8 pan with parchment paper.

  2. In a large bowl, combine crust ingredients and spread evenly in prepared pan. Use another sheet of parchment paper to pat dough down evenly.

  3. Bake for 15-20 minutes or until slightly golden, then let cool for 30 minutes.

  4. Reduce oven to 350 degrees F and top prepared crust with marshmallows and chocolate chips. Bake for 17-20 minutes or until marshmallows turn slightly golden. Let cool for 15 minutes then place in freezer for another 30+ minutes before cutting. Store in fridge or freezer.
