Chocolate Peppermint Marshmallow Bars
Ingredients:
crust (from Erin Lives Whole’s S’mores Bars)
3 1/2 cups almond flour
1/2 cup melted coconut oil
1/2 cup maple syrup
2 tsp vanilla
1/2 tsp salt
topping
1 cup mini peppermint marshmallows, I got these at Trader Joes
1 cup dark chocolate chips, I like Enjoy Life Foods
Directions:
Preheat oven to 375 degrees F and line an 8 X 8 pan with parchment paper.
In a large bowl, combine crust ingredients and spread evenly in prepared pan. Use another sheet of parchment paper to pat dough down evenly.
Bake for 15-20 minutes or until slightly golden, then let cool for 30 minutes.
Reduce oven to 350 degrees F and top prepared crust with marshmallows and chocolate chips. Bake for 17-20 minutes or until marshmallows turn slightly golden. Let cool for 15 minutes then place in freezer for another 30+ minutes before cutting. Store in fridge or freezer.
