Roasted Carrots with Yogurt Tahini Sauce
Ingredients:
for the carrots
2 lbs whole carrots, I like rainbow carrots
1/2 tbsp olive oil, or use olive oil spray
1 tsp all purpose seasoning, I like Costco’s No Salt Seasoning
1/2 tsp salt
pepper
for the sauce
6 oz plain greek yogurt
1/4 cup tahini
2 1/2 tbsp lemon juice
1/2 tsp salt
1/2 tsp garlic powder
pepper
2 tbsp water to thin, optional
Directions:
Preheat oven to 425 degrees F and line a large baking sheet with parchment paper.
Wash and peel carrots. Cut them in half and then cut any large pieces in half again. Spread out evenly on prepared baking sheet.
Spray/coat carrots with olive oil. Sprinkle with seasonings and toss to coat.
Roast for 30 minutes or until easily pierced with a fork.
While the carrots are roasting, add all sauce ingredients, except water, to a small food processor or a blender. Blend until smooth. Adjust seasoning as necessary.
Remove carrots from the oven. Allow to cool for a few minutes before serving with prepared sauce.
